Cheese and Tomato Fusilli

Ingredients


  • 350 g (12 oz) fusilli
  • 55 ml (2 fl oz / 1/4 cup) olive oil
  • 1 bunch of spring onions, chopped
  • 1 clove garlic
  • Salt and freshly ground black pepper
  • 225 g (8 oz) cherry tomatoes, quartered
  • 150 g ( 5 oz) Mozzarella cheese diced
  • 55 g (2 oz / 1/4 cup ) grated Parmesan cheese
  • 1 small bunch of basil
  • 12 pitted black olives, halved

Method


  1. Cook pasta in a large pan of boiling salted water as directed on packet, until just tender.

  2. Meanwhile , heat olive oil in a small saucepan. Add spring onions and cook, stirring occasionally, for 2-3 minutes.

  3. Add garlic and cook for 2 minutes. Drain pasta and return to saucepan. Add spring onion mixture and salt and pepper.

  4. Add tomatoes to pasta and stir over a gentle heat, to warm through. Stir in Mozzarella and Parmesan. Coarsely tear basil leaves, add to pasta with olives and serve immediately.
