Here is a great recipe, that has been family favorite for many years. its yummy and healthy!!!

2 tablespoons sunflower oil
1 medium sized onion, chopped
1 small fresh green chill, seeded and chopped
1 clove garlic finely chopped
2 tablespoons tomato puree (paste)
1 teaspoon ground cumin
1 tablespoon finely chopped fresh coriander
250 g (8 oz) cooked red kidney beans
500 g ( 1 lb) tomatoes, blanched, skinned, chopped
500 g ( 1 lb) cooked chicked
salt and pepper
Boiled rice or corn.
Heat oil in a heavy saucepan and fry over medium heat the onion, chilli and garlic for 4-5 minutes until the onion is soft but not brown.
Stir in tomato puree ( paste), cumin, coriander, beans, tomatoes and chicken; season with salt and pepper. Cover and simmer for 20 minutes until thick; if necessary, uncover and simmer for a further 10 minutes.
