Mexicali Chicken

Here is a great recipe, that has been family favorite for many years. its yummy and healthy!!!

  • 2 tablespoons sunflower oil
  • 1 medium sized onion, chopped
  • 1 small fresh green chill, seeded and chopped
  • 1 clove garlic finely chopped
  • 2 tablespoons tomato puree (paste)
  • 1 teaspoon ground cumin
  • 1 tablespoon finely chopped fresh coriander
  • 250 g (8 oz) cooked red kidney beans
  • 500 g ( 1 lb) tomatoes, blanched, skinned, chopped
  • 500 g ( 1 lb) cooked chicked
  • salt and pepper
  • Boiled rice or corn.

Mexicali Chicken


  1. Heat oil in a heavy saucepan and fry over medium heat the onion, chilli and garlic for 4-5 minutes until the onion is soft but not brown.

  2. Stir in tomato puree ( paste), cumin, coriander, beans, tomatoes and chicken; season with salt and pepper. Cover and simmer for 20 minutes until thick; if necessary, uncover and simmer for a further 10 minutes.

  3. Serve with boiled rice or tortillas and salad.
