Cinnamon Cookies


These crunchy cinnamon cookies are very popular not only among the Mexicans but all over the world. These cookies are yummy as well as healthy. Try this out!!!
 

Ingredients


  • 250G(8OZ) SOFT margarine
  • 125g(4oz/ ½ cup) caster sugar
  • 1 teaspoon vanilla essence
  • 350g(12oz /3 cups) plain (all-purpose) flour
  • 2 teaspoons ground cinnamon
  • salt
  • 250g (8oz/ 1 ½ cups) icing sugar

Method


  1. Pre - heat oven to 180 c (350f/ Gas 4).

  2. Grease 2 baking sheets. Beat together margarine, sugar and vanilla essence. Stir in flour and 1 teaspoon cinnamon to make a soft dough. Cover and refrigerate for 01 hr.

  3. Form mixture into 2.5 cm (1 in) balls and place on a prepared baking sheet, leaving space between each one. Bake for 15 minutes. Remove from the oven, leave on the baking sheets for a few minute, then transfer to a wire rack to cool. Mix together the icing sugar and remaining cinnamon; sieve over the cookies.
