Ceviche

Ingredients


  • 500 g (1 lb) firm white fish fillets such as haddock, cod or bass
  • 90 ml (3 fl oz / 1/3 cup) fresh lime juice
  • 155 ml ( 5 fl oz / 2/3 cup ) olive oil
  • 2 spring onions, finely chopped
  • 1 clove garlic finely chopped
  • 2 tablespoons finely chopped fresh coriander
  • few drops of Tabasco sauce
  • Sea salt

Method


  1. Rinse fish, dry and cut into thin strips across the grain. Place in a non-metallic bowl. Pour over lime juice, cover and marinate for at leas 15 minutes, but preferabl y over night in a cool place, when the fish will become opaque.

  2. In a serving bowl combine olive oil, spring onion, garlic, half the coriander and Tabasco sauce. season with salt.

  3. Drain fish and add to serving bowl. Toss gently, making sure fish is well coated. Sprinkle with remaining coriander.

  4. Variation: Use 375 g (12 oz) shelled scallops instead of white fish; slice each horizontally into two or three even slices.
