CASCADILLA

Ingredients


  • 450g (1lb) ripe tomatoes, peeled
  • ½ cucumber
  • 1 green pepper (Capcicum)
  • 2 spring onions
  • 1clove garlic, crushed
  • 1 teaspoon clear honey
  • 2 teaspoons chopped fresh tarragon
  • S250ml (9floz/ 1 cup) tomato juice chilled
  • 1 tablespoon balsamic vinegar
  • 300ml (10floz/1 ¼ cups ) greek yogurt, Chilled,
  • Salt and freshly ground black pepper
  • Spring onion slices and chopped fresh parsley, to garnish

Method


  1. Cut the tomatoes into quarters, remove the seeds and roughly chop the flesh.

  2. Cut the cucumber lengthways into quarters and remove the seeds. Roughly chop the flesh. Cut the pepper (capsicum) in to quarters and remove the core and seeds. Roughly chop the spring onions.
