Prawn Toasts

  • 30 g (1 oz) pork fat, finely minced
  • 185 g (6 oz) peeled prawns, finely minced
  • 1/4 teaspoon sea salt
  • 1 tablespoon cornflour (cornstarch)
  • 1 egg white lightly beaten
  • white pepper
  • 3 thin slices white bread, crusts removed
  • 125sg (4 oz) sesame seeds
  • 625 ml (20 fl oz 2 1/2 cups) vegetable oil

Prawn Toasts


  1. In a bowl, mix together, fat, prawns, salt, cornflour (Cornstarch) and egg white. Season with white pepper.

  2. Spread on to one side of each slice of bread. Coat with a thick layer of sesame seeds, and press well into the spread. Cut each slice into 4 squares.

  3. In a wok, heat oil until smoking, reduce heat slightly, then carefully lower in the fingers, coated side down. Deep fry for 2-3 minutes until golden brown. Drain on absorbent kitchen paper. Serve hot.
