Chinese Omelette


  1. In a bowl lightly beat together the eggs. Heat a dry, preferably non- stick, small frying pan. Pour in the eggs, stir lightly while tipping the pan so the raw egg flows onto the dry area. Cook for about 2 minutes until the under side is set and the top still slightly liquid. Turn the omelette over and cook the other side for about 2 minutes, until set.
