Iced Cup Cakes

This tiny iced cup cakes are ideal for a birthday party.The little cakes are enormously popular with guests. it is perfectly light and fluffy but not crumbly in the slightest! Extremely easy recipe to follow.

20 Cup Cakes


  • 150 g (5 oz / 1 1/4 cups) self - raising flour
  • 115 g ( 4 oz / 1/2 cup) caster sugar
  • 115g ( 4 oz / 1/2 cup) sunflower margarine
  • 2 eggs
  • 2 tablespoons milk
  • few drops vanilla essence
  • ICING:
  • 225 g (8 oz /1 1/2 cups) icing sugar
  • 3-4 teaspoons water
  • few drops food coloring ( optional)
  • Tiny sweets, sugar strands and other cake decorations, to finish

Iced Cup Cakes


  1. Preheat oven to 180 c ( 350F / gas 4). In a bowl, mix together all the cake ingredients.

  2. Using a teaspoon, divide the mixture between 20 paper bun cases placed in a tartlet tin. Bake in the oven for 15 minutes until golden. Transfer the cakes to a wire rack to cool before icing them

  3. To make the icing, sift the icing sugar into a bowl and mix in enough water to give a smooth coating consistency. Tint some of the icing with a small amount of colouring, if liked. Spread the icing over the tops of the cakes and decorate as wished while the icing is still soft. Leave to set before serving.
