Wash chopped parsley and drain well.
Mix chopped onions, salt, spices, parsley, chopped sweet pepper, and zucchini.
In another bowl, mix flour with baking powder then add to vegetable mixture. Blend eggs in a separate bowl, stir in lemon zest . Add the mixture to vegetable mixture and stir.
Heat oil in a pan, pour in a spoonful of omelet.
Turn over each ball till it is golden - brown from both sides ( repeat the process with the remaining mixture)
Serve balls warm with salad and fried potatoes.
